Grill Fried Chicken
When you want fried chicken but don't want to stand over a hot frying pan. Easy to make & Grill. Good to eat warm or cold! Not greasy.
4 Boneless/Skinless Chicken Breast, cut in half
4 chicken thighs - remove skin
4 chicken drum sticks - remove skin 1 cup seasoned bread crumbs (for a
crunchier coating, use corn meal - a 50/50 bread crumbs / corn meal combination
provides a nice balance)
2 tablespoons Bad Byron's Butt Rub or more to taste
1/2 cup vegetable oil
Clean & pat dry chicken pieces. Lightly brush chicken with vegetable oil. Dredge oil coated pieces in bread crumb mixture, coating thoroughly.
Heat grill and place sheets of aluminum foil on the grill grates. Lightly coat the foil with vegetable oil. Allow to heat for 1 to 2 minutes. When the oil on the foil is just beginning to smoke, place the chicken pieces on the foil & "fry".
Turn pieces occasionally, brown and cook thoroughly, about 5 - 8 minutes each side depending on the thickness of the chicken pieces.
