Cold Avocado Soup
This is GREAT! One of our Summertime Favorites. Smooth, Creamy, very Elegant. Your guests
will be surprised!
4 cups chicken broth
2 Ripe Avocados (use the dark skinned avocados for best flavor)
1/2 Onion, finely chopped
1 stalk Celery, finely chopped
1/2 cup Light Cream (optional)
Salt & Pepper to Taste
Puree Avocados, onion & celery in a blender until smooth. Add chicken broth. Blend for
about 30 - 45 seconds. Salt & pepper to taste. Add light cream & blend another 30 seconds.
Refrigerate until well chilled, 2 - 4 hours. Serve in chilled bowls.
Garnish with bits of tomato and/or celery flakes.
